The pita bread used in this sandwich not only adds flavor and texture, but it also provides the body with calcium, potassium, and magnesium. The ability to simply fill the “pocket” of the pita with the avocado mix helps give this sandwich a quick preparation time.

Avocados are the main ingredient of the filling of this sandwich. These fruits provide the body with many health benefits and nutrients, so include them in as many meals as possible. Following are all of the ingredients needed for this recipe:

1 avocado, ripe
1 T of orange juice, preferably fresh
½-1 t of green Tabasco sauce
¼ t of ground coriander
½ t of course salt and pepper
½ cup of yellow grape tomatoes
1 small cucumber
1 large or 2 small radishes
2 whole wheat pitas, 6-inches

First, prepare the avocado by slicing it in half and removing the pit. Then use a spoon to scoop out the inner flesh of the avocado, cut it into chunks, and add to a medium-sized bowl. Next, add the orange juice, Tabasco sauce, coriander, salt, and pepper to the avocado. Combine gently. Then prepare the tomatoes, cucumber, and radishes. Slice the tomatoes in half, and then add to the mixture. Peel the cucumber and then slice it in half lengthwise. Remove the seeded areas, and then dice the remaining parts. Add the diced cucumber to the mixture. Halve the radishes as well, then slice thinly and add to the mixture. Finally, combine the entire mixture, divide it between the two pitas, and serve. The pitas can be toasted or untoasted as desired.
