Cauliflower is a vegetable that is commonly overlooked. Most people associate green beans, carrots, or peppers with the word vegetable, but often forget that cauliflower has many of its own benefits to offer the body. It has antioxidant properties because it contains magnesium and Vitamin C. The white vegetable also has anti-inflammatory properties that come from Vitamin K and omega-3 fatty acids. Some even believe that cauliflower offers its consumers protection against cancer, which may be true. These are just some of the health benefits offered by cauliflower, so think of them when making this recipe.

These are the ingredients required:

1 head of cauliflower
¼ cup of olive oil
2 T of lemon juice, preferably fresh
2 T of fresh minced basil
½ t of dried oregano
Sea salt and black pepper, to taste
½ cup of grated parmesan cheese

This recipe yields four servings and requires about 15 minutes of preparation time. First, prepare the grill by setting it to medium-low heat. Ready the cauliflower by removing the green leaves from the outside of the cauliflower, and then cut the vegetable into steaks. These steaks should be about ¾ inch in thickness. The slices should be from the top of the head to the bottom of the stalk. Arrange the cauliflower steaks on a baking sheet to be brushed with the marinade. Prepare the marinade by whisking together the oil, lemon juice, basil, and oregano. Use a small bowl in which the ingredients should be whisked until the mixture is smooth, then add the salt and pepper to taste. Generously brush both sides of each cauliflower steak with the marinade. Keep some of the marinade and put it off to the side.

Put the steaks on the prepared grill, cover, and let cook until both sides of each are slightly browned. Each side should take about 10 minutes to brown. When flipping the steaks over, use the extra marinade to brush over both sides. After they have been browned, sprinkle the cheese over each side of the steak and let cook respectively. This vegetable dish is best enjoyed when the ingredients are fresh, organic, and when served immediately after cooking.
